Le pain industriel que l\u2019on trouve en supermarch\u00e9 et la plupart des c\u00e9r\u00e9ales de petit-d\u00e9jeuner entrent aussi dans cette cat\u00e9gorie. <\/p>\n<p><strong>Voyons ce qui n\u2019est pas transform\u00e9. <\/strong><\/p>\n<p>Un fruit cueilli sur un arbre n\u2019a subi aucune transformation. Un jus de fruits frais est un produit <em>minimalement<\/em> transform\u00e9. Mais \u00e0 part l\u2019\u00e9craser et lui enlever la peau, le fruit n\u2019a fait l\u2019objet d&#8217;aucun ajout et d&#8217;aucune transformation industrielle. <\/p>\n<p>A l\u2019autre bout de <a href=\"https:\/\/fr.openfoodfacts.org\/nova\" rel=\"noopener noreferrer\" target=\"_blank\">l\u2019\u00e9chelle<\/a>, les produits ultra-transform\u00e9s sont ceux qui ont subi les plus grandes transformations. On y a ajout\u00e9 des conservateurs, des exhausteurs de go\u00fbt, du sel, des \u00e9dulcorants, et j\u2019en passe. On a mix\u00e9 plusieurs constituants alimentaires entre eux (eux-m\u00eame d\u00e9j\u00e0 transform\u00e9s) et on a utilis\u00e9 des proc\u00e9d\u00e9s industriels pour favoriser leur conservation, comme l&#8217;hydrog\u00e9nation et l\u2019hydrolyse.<\/p>\n<p>Un essai clinique r\u00e9alis\u00e9 par le <a href=\"https:\/\/www.cell.com\/cell-metabolism\/fulltext\/S1550-4131(19)30248-7\" rel=\"noopener noreferrer\" target=\"_blank\">Journal of Cell Metabolism<\/a> a d\u00e9montr\u00e9 qu\u2019une alimentation compos\u00e9e de produits ultra-transform\u00e9s conduit \u00e0 <strong>une sur-consommation de 500 calories par jour en moyenne<\/strong>. <\/p>\n<p>Selon que vous soyez un homme ou une femme, si vous tentez de perdre du poids l&#8217;apport calorique journalier que vous visez se situe probablement entre 1500 et 2000 calories. Imaginez ce que repr\u00e9sentent 500 calories en plus !<\/p>\n<p>&nbsp;<\/p>\n<h2>Pourquoi ces calories suppl\u00e9mentaires ?<\/h2>\n<p>L\u2019\u00e9tude rel\u00e8ve deux raisons. <\/p>\n<p>La premi\u00e8re est li\u00e9e \u00e0 <strong>l\u2019origine des calories<\/strong> et \u00e0 la densit\u00e9 calorique des produits ultra-transform\u00e9s. <\/p>\n<p>Explications : \u00e0 force de transformations, ces produits perdent la composition nutritionnelle des aliments de base qui les composent. <strong>Ils sont charg\u00e9s en graisses et en sucre<\/strong>. Or les graisses contiennent deux fois plus de calories que les prot\u00e9ines par exemple. A quantit\u00e9 \u00e9gale, vous consommez donc deux fois plus de calories.<\/p>\n<p>La densit\u00e9 calorique tient aussi \u00e0 la taille de produits ultra-transform\u00e9s. Prenez les plats pr\u00e9par\u00e9s de mani\u00e8re industrielle. Vous avez remarqu\u00e9 comme ils sont toujours petits ? Ils sont con\u00e7us pour prendre moins de place. Leur petite taille permet de minimiser les co\u00fbts de transport, d&#8217;en disposer plus sur une \u00e9tag\u00e8re de supermarch\u00e9, et de prendre moins de place dans vos placards et dans votre frigo. Pour r\u00e9pondre aux crit\u00e8res d\u2019apports journaliers, il faut donc qu\u2019ils soient <em>caloriquement plus denses<\/em>. <\/p>\n<p>&nbsp;<\/p>\n<h2>L\u2019autre raison est hormonale<\/h2>\n<p>Au cours de l\u2019\u00e9tude, les participants qui suivaient le r\u00e9gime \u00e0 base de produits non transform\u00e9s (fruits et l\u00e9gumes frais, viandes non transform\u00e9es) ont vu leur niveau de ghr\u00e9line baisser. La ghr\u00e9line est l\u2019hormone digestive qui stimule l&#8217;app\u00e9tit. <\/p>\n<blockquote><p>A l\u2019inverse, ceux dont le r\u00e9gime \u00e9tait compos\u00e9 de produits ultra-transform\u00e9s mangeaient en plus grande quantit\u00e9. <\/p><\/blockquote>\n<p>L\u2019une des raisons suppl\u00e9mentaires est le fait que les produits ultra-transform\u00e9s ont un <a href=\"https:\/\/www.eatology.fr\/sante\/indice-glycemique\/\">indice glyc\u00e9mique<\/a> (IG) \u00e9lev\u00e9. Pas \u00e9tonnant vu leur niveau de sucres ajout\u00e9s et de glucides raffin\u00e9s. <\/p>\n<p>Les produits \u00e0 base de farine blanche comme les c\u00e9r\u00e9ales et le pain blanc \u00e0 IG \u00e9lev\u00e9 conduisent \u00e0 un sentiment de faim qui revient plus vite. La tentation du snack sucr\u00e9 pour r\u00e9tablir rapidement un niveau de glucose \u00e9lev\u00e9 est \u00e9galement plus importante. <\/p>\n<p>Le double effet insidieux ? Si l\u2019\u00e9nergie que vous apportez \u00e0 votre corps lui est fournie sous forme de glucose, alors <strong>vous ne l&#8217;incitez pas \u00e0 br\u00fbler ses graisses<\/strong>. <\/p>\n<p>&nbsp;<\/p>\n<h2>Les effets sur la sant\u00e9<\/h2>\n<p>Et si \u00e7a ne suffisait pas, rappelez-vous qu&#8217;une consommation importante de produits ultra-transform\u00e9s entra\u00eene des <strong>carences en fibre<\/strong> &#8211;
