Cette richesse lui conf\u00e8re donc des <strong>propri\u00e9t\u00e9s toniques, purgatives, laxatives<\/strong> et <strong>excellent anti-inflammatoire<\/strong> surtout pour les muqueuses buccales.<\/p>\n<p>Mais attention !!! La rhubarbe est une belle plante aux revers mortels : <strong>seules ses tiges sont comestibles<\/strong>. Les feuilles en revanche, charg\u00e9es d\u2019acide oxalique, substance extr\u00eamement toxique peuvent \u00eatre mortelles \u00e0 l\u2019ingestion.<\/p>\n<p>Cela dit, pour bien choisir ses tiges de rhubarbe, il faut veiller \u00e0 ce qu\u2019elle soit bien \u00e9paisse, ferme, pleine, d\u00e9pourvue de t\u00e2ches et de fl\u00e9trissures. La rhubarbe peut se conserver quelques jours seulement au r\u00e9frig\u00e9rateur, car elle devient rapidement molle. Cependant, <strong>elle se cong\u00e8le tr\u00e8s bien<\/strong>. Il suffit pour cela de la laver, de l&#8217;essuyer, de la couper en tron\u00e7ons \u00e0 glisser dans un sac de cong\u00e9lation et le tour est jou\u00e9.<\/p>\n<p>La rhubarbe peut \u00eatre mang\u00e9e crue, juste coup\u00e9e et tremp\u00e9e dans un peu de sucre ou de sel (un peu comme les radis) mais aussi, cuite, en tarte, en confiture, en compote ou aussi en sorbet.
