locked=&#8221;off&#8221;]<\/p>\n<h2>Un peu d\u2019histoire cacaot\u00e9e<\/h2>\n<p>Les premi\u00e8res traces du chocolat remontent au <strong>2e si\u00e8cle avant JC en Am\u00e9rique Latine<\/strong>. A cette \u00e9poque, ce sont les f\u00e8ves de cacao, aux propri\u00e9t\u00e9s pr\u00e9tendument m\u00e9dicinales, qui sont consomm\u00e9es sous forme d\u2019infusion au Mexique. Puis, quelques si\u00e8cles plus tard, c\u2019est r\u00f4ties, moulues et m\u00e9lang\u00e9es \u00e0 du piment, de l\u2019eau et de la semoule de ma\u00efs que les Mayas la consomment. Cette boisson qu\u2019ils nomment <strong>\u00ab xocolatl \u00bb<\/strong>, litt\u00e9ralement \u00ab eau am\u00e8re \u00bb, est v\u00e9n\u00e9r\u00e9e de tous et consid\u00e9r\u00e9e comme la boisson des dieux.<br \/>Au <strong>XVIe si\u00e8cle<\/strong>, l\u2019explorateur <strong>Hernan Cortes<\/strong> tombe sous le charme de ce mets et le ram\u00e8ne avec lui en Espagne. C\u2019est le d\u00e9but du chocolat en Europe. Bien que peu co\u00fbteux \u00e0 produire, il va vite \u00eatre r\u00e9serv\u00e9 \u00e0 l\u2019\u00e9lite et \u00e0 la royaut\u00e9.<\/p>\n<p>Selon la l\u00e9gende, <strong>Marie Th\u00e9r\u00e8se, infante d\u2019Espagne<\/strong> et \u00e9pouse du roi Louis XIV, avait deux passions : le roi et le chocolat.<\/p>\n<p>Il faudra attendre le XIXe si\u00e8cle pour que le chocolat se d\u00e9mocratise et devienne accessible \u00e0 tous. D\u2019abord vendu sous forme de tablette, le hollandais <strong>Van Houten<\/strong> invente en 1828 le cacao en poudre soluble, <strong>Rodolphe Lindt<\/strong> en 1879 d\u00e9pose le proc\u00e9d\u00e9 de fabrication du chocolat fondant puis en 1875 <strong>Henri Nestl\u00e9<\/strong> invente le chocolat au lait \u00e0 croquer. M\u00e9lang\u00e9es au beurre de cacao et au sucre, elles permettent d\u2019obtenir ce qu\u2019on appelle du chocolat. Mais n\u2019est pas chocolat qui veut : la composition du chocolat est d\u00e9finie pr\u00e9cis\u00e9ment par la loi (et oui rien que \u00e7a !). En France, la composition des produits de chocolat et de cacao est d\u00e9finie par le d\u00e9cret n\u00b076-692 du 13 juillet 1976. En vertu de ce d\u00e9cret, le chocolat est un produit obtenu \u00e0 partir de cacao et de sucre et dont la <strong>teneur de cacao est au moins \u00e9gale \u00e0 35%<\/strong>. Il existe plusieurs cat\u00e9gories d\u2019antioxydants : les vitamines, les ph\u00e9nols, les carot\u00e9no\u00efdes ou encore certains min\u00e9raux tels que le zinc et le s\u00e9l\u00e9nium. Les fruits et l\u00e9gumes les produisent naturellement pour lutter contre les agressions ext\u00e9rieures.<\/p>\n<p>Dans le chocolat, on trouve surtout des <strong>polyph\u00e9nols<\/strong> tels que les flavonols. Ces mol\u00e9cules au <strong>puissant pouvoir anti-inflammatoire et vasodilatateur<\/strong> permettent donc de lutter contre l\u2019inflammation et ont un effet protecteur sur le syst\u00e8me cardio-vasculaire, le cholest\u00e9rol ou encore la tension art\u00e9rielle. Par ailleurs, les flavonols auraient une action b\u00e9n\u00e9fique sur la fonction c\u00e9r\u00e9brale en <strong>stimulant la m\u00e9moire<\/strong>.<\/p>\n<p>Mais attention, ces <strong>polyph\u00e9nols sont concentr\u00e9s dans la poudre de cacao<\/strong>. Faire fondre le chocolat au bain-marie<br \/>2. Incorporer dans le chocolat fond 2 cuill\u00e8res \u00e0 soupe de cacao en poudre<br \/>3. Dans une casserole, faire chauffer la cr\u00e8me fraiche jusqu\u2019\u00e0 \u00e9bullition puis incorporer au m\u00e9lange e chocolat progressivement pour obtenir un m\u00e9lange homog\u00e8ne<br \/>4.
